How to do pancake day, the healthy way! Gluten-free, Sugar-free, Vegan and Non GMO pancakes.

Hi guys, I really wanted to share with you my healthy Pancake Day – which having been gluten-free for the past 14+ years, hasn’t always been the easiest or yummiest thing to do!

I’ve experimented over the years with gluten-free pancake mixes and also pre-made gluten-free pancakes (which I think are tiny and more like scotch pancakes than the thin, larger pancake I associate with pancake day!)

But this year I have this pancake mix shown below, that I’ve tried, tested and given the green light to make my pancake day ‘flippin’ fantastic this year (like what I did there, playing on the action of flipping pancakes in the pan 😉😉)

Pancake Day the healthy way – All about the healthy pancakes on my menu:

This pancake mix is super healthy as it is mainly made of a mix of brown rice flour, quinoa, buckwheat, tapioca flour and flaxseed. Plus, not only is this mix gluten-free but it is also: GMO free, Sugar free, Vegan, Vegetarian and Made in the UK. I know right, I felt healthy just looking at the box!

Product Review: SweetPea Pantry Grainy Brainy Pancake Mix.

Well me and my older brother had lots of fun in the kitchen trying these pancakes, although he had even more fun watching me try to toss a pancake in the pan! See my photo below for the mess I made as it fell overboard and broke apart… Lets just say he is the biggest tosser out of us two (shhh don’t tell him I said that!)

How not to toss a pancake…

We followed the directions on the box and tried our 1st pancake. We felt the mixture was too thick and because of this, it was hard to spread around the pan and took longer to cook because of its depth.

There was no time-wasting, we took the executive decision to add in an extra amount of the chosen milk or milk alternative as directed on box. That extra bit of liquid made the consistency of the mixture SO much better for spreading around the pan, shorter cooking time and making more of a traditional thinner pancake too.

My parents joined in with the taste testing – neither are gluten-free but both said they enjoyed the taste of the pancakes, but could tell they were eating a healthier version than their normal traditional batter pancakes with full-blown gluten and wheat flour in.

Personally, I love the feeling of knowing what I’m eating is a healthier version. However, I know for some it may spoil or change the treat that Pancake Day is to them, esp if they treat themselves to lashes of sweet & sugary treats on top of their pancakes.

Myself, I am a maple syrup kind of girl. However, if you are looking for healthier toppings as well as a healthier pancake this year, maybe you could try some of these…

  • Strawberries, blueberries, Acai berries & others in the berry family.
  • Low-fat yoghurt
  • Natural local honey.
  • Coconut sugar
  • Coconut butter
  • Natural honey & mixed nuts and seeds (linseed, chia seeds, pumpkin seeds, poppy seeds etc…)

Here is why we celebrate Shrove Tuesday as Pancake Day:

Some may take part in Pancake Day but not actually know what the origins of this tradition are. Pancake Day is actually ‘Shrove Tuesday’ and it is the day of feasting before Lent starts the following day on Ash Wednesday. As Lent is traditionally a time of fasting for the Catholics and Christians who follow this tradition, people used up their eggs and oils by making pancakes so that the ingredients weren’t wasted being uneaten throughout Lent.

Well, whichever type of pancake or toppings you choose this year, I hope you have an enjoyable Pancake Day this Shrove Tuesday.  Maybe you are also considering giving up something for the Lent period that follows?   1. These look amazing!! I’m currently doing a low carb diet as I noticed my body doesn’t seem to handle carbs too well. BUT I’ve been also wondering if it could be a gluten allergy thing and have been interested in trying out gluten free carbs. This looks like a dangerously delicious way of starting that out! Thank you for sharing!

    1. That’s a good idea to see if it’s the gluten specifically in the carbs that’s upsetting your body. They really are some of the best gluten free pancakes I’ve tried & I have tried a lot 😉😜 Let me know how you get on if you try them or try gluten-free for a while… 🥟

    1. Yeah it’s really interesting the different traditions in different places for things. This is a yummie tradition even people who don’t actually take part in Lent also enjoy as who doesn’t like an excuse to eat pancakes right 😉 I would search Pinterest for keto pancakes as there is so much on there I’m sure you would find some… 🥟

That’s great well done 🙌 Going more natural has been so good in my health improvement journey but also for my skin, hair etc as I changed to natural products too (there are a few reviews of products in the natural living section of the blog too).
